| Description: | RESUMEN La miel de abejas Meliponas (Melipona beecheii), es una especie nativa de abejas sin aguijón, altamente valorada en la región de Yucatán, aunque existen otras abejas sin aguijón con potencial para ser domesticadas, esta especie es la que prevalece. Su miel ha sido poco estudiada en relación con su capacidad antioxidante y su origen floral, lo que limita su valoración y promoción en mercados locales e internacionales. El objetivo del presente trabajo fue evaluar la calidad y funcionalidad de la miel de Melipona beecheii con enfoque a la determinación de su actividad antioxidante y su origen floral como posibles parámetros de correlación con su funcionalidad. En el análisis palinológico se registraron exitosamente 39 especies florales para ambas épocas (seca y lluvia), siendo las familias con mayor abundancia Fabaceae, Solanaceae, Rutaceae, Asteraceae y Amarallydaceae. De las 12 muestras analizadas en melisopalinología, 7 se clasificaron como mieles monoflorales, de las cuales cinco fueron de la especie Bursera simaruba, dos de Pisidium guajava y una de Mimosa bahamesis. Para pH se obtuvo una media de 3.8; acidez libre con 18.33 (mEq/kg); para cenizas 0.27%; humedad 16.11%; °Brix con 76.54; el IR 1.48; conductividad eléctrica 0.29 mS/cm, en cuando a HMF se obtuvo una media de 31.21, para antioxidantes se obtuvo alta variabilidad entre muestras. La mayor equidad polínica en época lluvia sugiere que las condiciones abundantes favorecen una distribución más balanceada, mientras que la época de secas, con menor disponibilidad de recursos, podría permitir que algunas especies se vuelvan dominantes. ABSTRACT Meliponas honey bees (Melipona beecheii), is a native species of stingless bees, highly valued in the Yucatan region, although there are other stingless bees with the potential to be domesticated, this species is the one that prevails. Its honey has been little studied in relation to its antioxidant capacity and floral origin, which limits its valuation and promotion in local and international markets. The objective of this work was to evaluate the quality and functionality of Melipona beecheii honey with a focus on determining its antioxidant activity and its floral origin as possible parameters of correlation with its functionality. In the palynological analysis, 39 floral species were successfully recorded for both seasons (dry and rainy), with the families with the highest abundance being Fabaceae, Solanaceae, Rutaceae, Asteraceae and Amarallydaceae. Of the 12 samples analyzed in melissopalynology, seven were classified as monofloral honeys, of which five were from the species Bursera simaruba, two from Pisidium guajava, and one from Mimosa bahamesis. The average pH was 3.8; free acidity was 18.33 (mEq/kg); ash content was 0.27%; moisture content was 16.11%; °Brix was 76.54; IR was 1.48; electrical conductivity was 0.29 mS/cm; HMF was 31.21 on average; and antioxidants showed high variability between samples. Greater pollen equity during the rainy season suggests that abundant conditions favor a more balanced distribution, while the dry season, with fewer resources available, could allow some species to become dominant. |
