Description: | El chile (Capsicum annuum L.) es un alimento que México ha aportado al mundo, rico en compuestos bioactivos (CB), como los carotenoides (CC) que han sido estudiados ampliamente en sus frutos. Sin embargo, poco se ha indagado acerca de su comportamiento en una matriz alimenticia afín a los CC, como lo son las salsas de aceite que podrían favorecer su liberación y absorción en el tracto digestivo de quienes las consuman. |
